We make a concerted effort to keep seeking out the best of the best.
We also offer Pacifique Absinthe Verte Supérieure, a super-premium absinthe crafted in the historic Franco-Swiss style from a classic 1855 French recipe. It represents the kind of absinthe one would drink in 19th century France. Birch Street serves it using the classic French Drip Ritual. Legal in the US since 2008.
